Ingredients:
3 cups chopped kale
1 large sweet potato, peeled and cubed
32 oz. reduced sodium vegetable broth
1 cup pure water
1 medium onion, diced
2 cloves garlic, minced
2 tbsp olive oil
Pepper to taste
Let’s get started.
In a large pot, heat olive oil over medium-high heat. Add onion,
garlic and kale and saute until onion is translucent. Reduce heat to
medium and add pepper, vegetable broth, water and sweet potato.
Simmer for 15-20 minutes until sweet potato is tender.
