Cherry Vanilla Dairy-Free, Soy-Free Ice Cream

So, for How To’sday this week you learned how to pit cherries. Now let’s do something easy and delicious with them—Cherry Vanilla Dairy-Free, Soy-Free Ice Cream sound good to YU?


Ice Cream Maker (optional)

Try to buy everything organic. Here’s why.
2 tsp lemon juice
2 tsp vanilla extract (fancy it up instead, use the seeds from 1 vanilla bean)
3 cups cherries, pitted (how to pit cherries)
15 dates, pitted (here’s how)
1 1/2 cups coconut milk (1 can or store-bought carton) or
Homemade raw coconut milk
Pinch sea salt


Let’s get started.
Pit those cherries. You can use the paring knife method if you like because we will be blending them a bit.

Place all ingredients and only 1 cup cherries into the blender and mix well (bottom, left). Now add remaining cherries (bottom, right) and pulse a bit to break them up. If you don’t like chunks in your ice cream, blend it all up until smooth.

If you have an ice cream maker, chill the mix so it’s cold and process in the ice cream maker according to manufacturer’s instructions. Freeze in a large, airtight glass container. No ice cream maker? Just pour into a large, airtight glass container and freeze.

Thaw for about 10 minutes before serving. Enjoy!


Adaptation Ideas:
1. Fold in a chopped vegan chocolate bar before freezing
2. Fold in 2 tbsp to 1/4 cup (to taste) of bourbon, or Chambord, for a dinner party
