The judges and I are tasting our way through the submissions this week, and while we do, I will keep sharing what is on the menu for us, as well as our progress. 2 cups chopped cauliflower
pinch of sea salt
5 to 6 slices of red onion, chopped
1/4 to 1/2 clove fresh garlic, finely minced
5 springs of fresh cilantro, finely chopped
1 plum tomato, diced
In a blender or food processor, finely chop the cauliflower. In a large bowl, mix the cauliflower, sea salt and avocado until the avocado is completely mashed. Next, add the onion, tomato, garlic and cilantro and stir. Enjoy!
