There’s nothing I love more than a refreshing summer salad, but sometimes I don’t feel like eating yet another romaine or spinach concoction. Luckily, I stumbled upon a version of this simple, flavorful salad when dining at Marché in Nashville last week, a delectable little French bistro known for its innovative and fresh food. On a hot summer day, this salad cooled me right off.
At home, I was able to recreate this salad in 60 seconds flat, making for the quickest and one of the most refreshing and flavorful salads I’ve ever had. The crisp sweetness from the watermelon blends perfectly with the onion, fresh basil and tomatoes. A drizzle of balsamic is all you need to meld the flavors. So, grab a knife and a few key ingredients to bring an instant summer classic to your kitchen!
Buy everything organic if you can. Here’s why.
1 handful watermelon (pre-cut)
1 handful cherry or grape tomatoes
¼ red onion
3 large basil leaves
Drizzle of balsamic
1. Cut watermelon into cubes. Cut tomatoes in half. Cut red onion into slivers and
