This raw, coconut-based, dairy-free ice cream is beyond creamy. I actually had a friend tell me that it is “texturally superior to dairy.” Love that. Fresh organic mint, spirulina and chlorophyll not only give it a handsome green color, but loads of extra nutrition, without compromising taste. Bonus: you don’t need an ice cream maker to enjoy this super-creamy ice cream recipe.

Ice Cream Maker (optional)
Unfrozen Raw Dairy-Free Vanilla Ice Cream
1/2 cup tightly packed fresh, organic mint leaves
1T of liquid Chlorophyll (optional, for color and extra nutrition)
1/2 tsp spirulina crystal flakes (feel free to add more if you like)
1T of organic peppermint extract (or more to taste)
You can replace many of the time-consuming ingredients with ingredients found at your local health food store, but know that the recipe won’t be raw.
Look for Coconut Milk Ice Cream to replace Unfrozen Raw Dairy-Free Vanilla Ice Cream. You can also use store-bought Coconut Milk, Almond Milk or Hemp Milk or try making your own Raw Almond Milk, Raw Hemp Milk to replace the milk called for in the Vanilla Ice Cream mixture.
Let’s get started.
Put all ingredients in the blender and blend for 3 minutes. You want to blend it for a while to bring it to the creamy and smooth consistency. If you have an ice cream maker, after mixture is blended, chill for about 1 hour in the refrigerator and then pour into your ice cream maker and follow the manufacturer’s instructions.
If you won’t be using an ice cream maker, once your 3 minutes of blending are up and your mixture is smooth, pour into a deep dish, cover it and place in the freezer for at least 2 hours. When ready to eat, let ice cream thaw on counter for about 15 minutes until you can use a scooper to dish it out with ease.
NOTE: Look for unique ingredients in your local health food store and try the bulk section for the cost savings, especially for vanilla bean pods. Ask your grocer to stock the ingredients that you need.
