Naturally Sweetened Whole Blueberry and Lime Granita

This recipe will be a perfect sweet treat to enjoy and share over the holiday weekend. Usually granita is prepared with juice and refined sugar, but I wanted to create a version of granita that keeps all ingredients in their whole food state—complete with fiber for a slow and natural release of the fruit sugar into the bloodstream. This is a frozen treat you can really feel good about. It’s not just full of fiber, but it’s also rich in antioxidants. Give it a try this weekend and wow your fam and friends.

Makes: approx 5-6 servings 
Time:
10mins to make, 2 hours to freeze

Tools:
High-powered blender or
Food processor (you just may not achieve a super smooth texture)
Chef’s knife
Zester (optional)
Fork

Ingredients:
6 oz organic blueberries
3 Medjool dates, pitted (here’s how)
2 tbsp fresh, organic lime juice
1 tsp organic lime zest
1/2 cup pure water

 

Let’s get started.

Wash your blueberries well.

Wash and then zest your lime.

Place all ingredients in the blender and mix on high until very smooth.

Pour into an adorable glass dish…

…with a lid. Cover and place in the freezer.

After about 1 hour, use your fork to “grate” and break up the granita. Freeze a bit more and repeat until you achieve the texture you’d like.

Psst: This also makes a delicious fruit smoothie. Just blend all ingredients with a handful of ice. Yum. Fantastic energy before a workout.
