YU may already be familiar with Meghan’s Spicy Sweet Potato and Refried Bean Burrito here on the site, but today I’m sharing a dessert recipe from UnDiet that immediately caught my eye as soon as I cracked the pages. Fate?

Meghan Telpner’s Berry Crumble

Let’s make Meghan’s Super Berry Fruit Crumble
(And good luck not eating it all in one sitting)

Ingredients:
Try to buy everything organic. Here’s why.
Fruit Bottom
2 cups blueberries*
2 cups strawberries
2 cups apple, cut into 1/2″ cubes
1/2 cup raw honey
1 tbsp arrowroot starch

*In UnDiet, Meghan provides adaptation suggestions (YU know I love that about her, too), and since I only had 1/4 cup of blueberries on hand, I used them and 3/4 cup blackberries to make up the diff and it worked beautifully.

Crumble Topping
2/3 cup brown rice flour
2/3 cup rolled oats
1/2 cup sliced or slivered almonds
1/2 cup raw honey
1/4 cup coconut oil
3/4 tsp cinnamon
1/2 tsp allspice

1. Preheat the oven to 350°F.

2. Mix fruit, raw honey and arrowroot…

… and spread  into an 11″ x 9″ glass baking dish. Flatten with a spatula to make sure it is evenly spread.

3. In a medium mixing bowl, combine all topping ingredients…

… then crumble evenly over fruit mixture. If the fruit doesn’t look completely covered, add additional flour almonds or oats until the surface is covered.

4. Bake for 45 minutes, or until lightly browned and bubbling.

    I started a Gluten Free and plant based diet a little over a month ago because of two reasons. 1. I want to be as healthy as I can so I can live the rest of my life feeling good inside and out! 2. I have a rare disease EED and the research that I’ve done suggest that if I follow a Gluten Free diet that it would control the symptoms and stay off the antibiotics that I would have to take the rest of my days.     Hmmm, not sure where my comment went as I thought I left one on April 16, but may I was only dreaming 🙂 I would love to win the contest for a number of reasons. First, the more resources I have access to to keep me on track and learning more about plant based eating would be amazing. Second, I read Meghan’s back story on her internet site. I have a number of friends with Crohn’s & Colitis and would love to be able to share what has worked for her so that they can benefit. I am actually fundraising right now for the Inflammatory Bowel Disease Clinic at the University Hospital in Edmonton. They are one of the leading research and treatment centres in Canada and as part of my race coming up in Iceland I decided to draw attention to IBD’s such as Crohns & Colitis. The diseases can have such a devastating impact on so many aspects of an individuals life. Third I work in the health & fitness industry and nutrition is a keen interest of mine. Anything I can share with clients to help them become healthier would be of great benefit.

    I would love to win a copy of UnDiet. I think it would be a helpful addition to my new library of whole-foods, plant-based diet/lifestyle books. I started on a health journey of my own in 2009… at 55, I was morbidly obese (299 lbs.), had diabetes, hypothyroidism, arthritis, depression & anxiety problems, etc. I was tired of being fat and sick! I discovered the power of green smoothies and raw foods and the weight began to come off! I have lost 95 pounds and am getting closer to my goal of 150 pounds released!     I would like to win a copy of UnDiet for so many reasons — but one of them is that the poor eating habits that I’m addicted to, are @ war with my burgeoning cravings to eat more veggies & fruit & whole grains (and less refined foods and meats). These poor habits are resulting in chronic pain throughout my body.     The UnDiet looks like a perfect resource. Very nicely done cover, layout and such. Plus the sample recipe sounds awesome.

    I’ve been working on warding off bad stuff through diet changes for some time now, and it is wonderful to have recipes at the fingertips that help with the transitions.

    I don’t always have the time, wherewithal or extra inventory to work out new recipes on my own – it helps to have a good plan that I’m certain will turn into something that is both healthy and tasty. And maybe the boyfriend will like some of the stuff too! 🙂
