I am crazy for cardamom. It has an exotic, unique taste, with a flowery aroma that pairs very nicely with lime. It is delicious in Mixed Vegetable Curry and partnered with chia seeds, it makes a delicious, creamy pudding. I made these Cardamom Lime Pistachios late one night to have a snack ready for the week. They are great eaten alone or tossed into a big mixed green salad with fresh sunflower sprouts.

Makes: approx: 1 cup | Preparation Time: 10-20mins | Dehydration Time: 6-8hrs
Grater or zester
1 cup raw pistachios
1 tsp of organic lime zest
1 tbsp of organic lime juice
1/8 tsp ground cardamom
1/8 tsp fine ground sea salt
2 tbsp raw, wild-harvested honey
Let’s Get Started:
Create your lime zest and then chop it finely.
Mix all ingredients in a bowl making sure pistachios are thoroughly coated. Place on the Teflex sheet on your dehydrator tray and place in dehydrator set to 100° for 4 hrs. After 4 hrs, transfer or flip your pistachios onto a dehydrator screen so the air can come in on all sides. Dehydrate another 2-4 hours.
