Roundup: A Proper Plant-Based “No-Turkey Day” Feast

I love this time of year for many reasons, but one of my favorites is that it is an incredible opportunity to show yourself, your family and your friends that eating a plant-based diet is loaded with possibilities. What can you prepare if you aren’t eating Turkey for Turkey Day? Well, I ask “what can’t you have?”

I have compiled a list of some of my favorite holiday recipes for you so you can prepare an unforgettable plant-based Thanksgiving feast that won’t leave you napping for hours afterwards. All recipes are nutrient-packed and made with whole foods (no tofu or fake meats) and most can be prepared gluten-free.

 

Appetizers/Snacks/Extras:

Herbed Cashews

Hearty Cauliflower Chowder

Add grilled onion, salt and pepper for a variation

Main Courses:

Peppered Lentils with Kale & Butternut Squash
As is, or baked into acorn squash

Butternut Squash Lasagna with Walnut Cashew Cheese

Black Quinoa, Sweet Potato Kale Cakes
These will be incredible with Mushroom Gravy if you just change the recipe a bit. Don’t use cumin, coriander or cinnamon. Use 1 tsp each of fresh thyme, rosemary and sage instead.

Twice Baked Sweet Potatoes
Amazing with or without vegan marshmallows

Add roasted garlic, coconut oil and salt and pepper for a richer version

Blend and add a touch of water or veggie broth to make a smooth gravy

Salted Caramel Sauce
Use the gooey caramel layer from this candy bar recipe and adjust ingredients a bit. Use 1/4 tsp sea salt and 2 tbsp arrowroot powder (be sure to make a slurry) instead.
